BIRD watchers have told Inez Chapman, hostess of Villa Escazú, that they have seen more species from her balcony, verandahs and gardens than they had on some excursions. In the western San José suburb of Escazú, this cozy bed and breakfast is surrounded by nature, yet it's only a few minutes from urban attractions.
Doña Inez takes pride in her breakfasts, which bring her loyal

The house specialty is a giant pancake topped with fruit and real whipped cream. Other favorites include an avocado-filled omelet and French toast. Guest from six continents have lauded her cooking in comments in her guest book, which is proudly displayed in the spacious living room where visitors gather to socialize and compare notes.
INEZ' expertise help newcomers with their travel plans, and she arranges car rentals, excursions and tours to the beaches, forests and mountains.
She personally checks out hotels and lodges in all categories thought the country. A bed and breakfast is different from a full service hotel, and certain procedures are followed to insure the tranquility of all. Guests are requested to be in by 10 pm, as others may have to get up before dawn to depart on excursions. Smoking is permitted only outside and young children are generally not accepted.

Villa Escazú:  A B&B that Stays True to Its Name

BY JEFFREY VAN FLEET

IT'S always a treat to find one of those special special places in Costa Rica.  You know, they're the ones you recommend to friends when they say "I'm coming to Costa Rica.  Can you suggest a great place to stay?"
Villa Escazú, in its namesake western San José suburb, is just such a find.
New York native Inez Chapman opened her home, a Swiss chalet-style building, to guests in 1991.
Though many lodgings in Costa Rica bill themselves as "Bed and Breakfast," Chapman quickly points out that Villa Escazú is one of a handful that really fits the traditional definition, one where the owners open their home and live on the premises.  Ever the gracious host, Chapman takes the B & B designation to heart.

"BED and breakfast guests are special," she says.  "They tend to be well traveled and independent, and enjoy the sociability of fellow travelers gathering and sharing their finds."

"A B & B is for gathering,"  Chapman adds, and she takes care to create a homey, sociable atmosphere that fosters exactly that type of getting together.

And it's that second "B" in B&B that will leave your mouth watering.  Chapman serves breakfast on the porch overlooking her property's wooded area with commanding views of  the Central Valley.  She makes all her breakfast from scratch with natural ingredients.  One morning it will be banana pancakes - the bananas come right off the tree; the next, French toast soufflé, all accompanied by a delicious cup of coffee.

"I love coffee that tastes like coffee," said a guest at breakfast one recent weekend morning.

Chapman's variety of recipes means that guests have to stay at the lodging a very long time before they get a repeat meal.
"I don't think I've had a guest get the same breakfast twice," she says proudly.  Though certainly with the frequency of repeat business - testimony to the popularity of the place - that's bound to happen sometime.

AND the "bed" part of the "B&B" designation?

Each of the lodging's three floors has two large well-ventilated bedrooms that share a bath.  The bottom floor also comprises a fully equipped studio apartment with kitchenette and cable T.V.

The home sits on a secure site amid landscaped gardens on a 0.4-hectare wood-ed property.  Paths lead down to a river and provide ample opportunity for some in town bird watching.
THOUGH secluded, villa Escazú is close to area attractions, and

THE REAL THING: Villa Escazú is a true B&B says owner Inez Chapman (below with furry friend Feliz), who lives on the premises and makes all natural gourmet breakfast for guests.

Chapman gladly arranges taxis and tours and airport transport through local contacts.
Room rates are $26-$60 depending on season and include breakfast and taxes.
The studio apartment rents for $250/week, discounted according to season and length of stay.
Villa Escazú is 900 m. west of Banco Nacional in Escazú.  For reservations or more information, phone or fax  (506) 2289-7971,
